DESCRIPTION
Galangal is a tropical plant in the ginger family. There are several varieties; the
two used in the kitchen are greater galangal and lesser galangal. Greater galangal
is native to Indonesia, specifically Java, and lesser galangal to southern China.
Today, galangal is cultivated in China and Southeast Asia.
